HOOKED ON FISH BITES & SARDINIAN SALAD

CRUMBED FISH BITES WITH COCONUT & SARDINIAN SALAD

Are you up to something fishy?!

FISH BITES

Ingredients:
Rockling or salmon
Breadcrumbs
Coconut milk
Parsley

Step 1.  Cut fish or salmon into bite size pieces & dip in coconut milk then in salted breadcrumbs
Step 2. Shallow fry and serve with this simple salad and lemon wedges or garlic aoli.

Hint: #For crunchier texture use Panko Japanese breacrumbs
          #Add finely chopped herbs (parsley or coriander) to salted breadcrumbs

SARDINIAN SALAD

In a bowl toss together a can of drained Butter Beans, handful of chopped parsley, pan fried zucchini, sliced red capicum. You could add red onion slices and a mix of green and kalamatta olives.
Dress with some lemon juice,  extra Virgin olive oil, vinegar & cracked pepper.

TARTED UP

PORTUGESE CUSTARD TARTS

Prepare to tart your way to the top with this scrumptious dessert that will tickle everyones fancy!

Ingredients:
3 egg yolks
Caster sugar
Corn flour
Milk
Vanilla essence
Puff pastry

Step 1. Using a cup cut puff pastry into circles
Step 2. Mix 3 egg yolks, 1/2 cup sugar, 2tbsp corn flour, 1 cup milk and stir mixture gradually in saucepan over medium heat until mixtures thickens then allow to cool
Step 3. Pour mixture into pastry shells and sprinkle some sugar over each one
Step 4. Cook on 180 degrees for approx 20 mins until pastry is slightly golden & crispy.

MERRY XMAS

FLAMING, FESTIVE AND SLIGHTLY BOOZY ICE CREAM CAKE!

Forget soaking fruit overnight..Try this fail proof ice cream xmas cake on NEW YEARS EVE!


STEP 1. In a large bowl,  allow vanilla ice-cream to melt a little & fold through 1 cup (min) mixed dried fruit, glazed cherries and a decent splash of brandy 
STEP 2.  Line a round bowl with glad wrap and pour in mixture and place back in freezer for few hrs
STEP 3. Heat approx 1/3 cup brandy in saucepan until boiling & IGNITE with match and pour over cake. It should be flaming. 
STEP 4. Serve with caramel sauce (combine 75g butter, 1/4 cup brown sugar and 2tbs milk in saucepan and heat gently for few mins until smooth) & Pomegranate seeds. Enjoy!

TOMATOFEST

XMAS SALAD
 Beautiful Heirloom Cherry Tomatos with rocket, goats cheese and pine nuts and house dressing (apple cider vinegar, oil, pinch of sugar and lemon juice).
HINT: Bake cherry tomatos in oil and dash of balsamic vinegar & use spoonful of the juice in dressing

THINK BEANS

FREEKEH SALAD
This is the best salad. Everyone loves it.
 Yes there are a few ingredients but worth a little bit of effort.

















Freekeh
Brown lentils (can)
Parsley
Coriander 
Capers
Red onion
Cumin
Slivered Almonds
Pine nuts
Currants
Natural yoghurt
Pomegranate 

Step 1. Cook Freekeh for about 20 minutes in boiling water and drain
Step 2. Heat small amount of oil in pan and fry off some pine nuts and teaspoon of cumin for 1 min 
Step 3. Drain Lentils, chop parsley& coriander and toss all ingredients together
Step 4. Add splash of oil and lemon juice to moisten and serve with a generous dollop of natural yoghurt and pommel granite seeds

HINT: Tatziki dip can be used instead of yoghurt 
            Pomegranate seeds optional. Perfect if you can find them but not essential!

CALAMARI PROJECT





This dish is quick, fresh and you can spice it up.

Step 1. In a food processor (or mortar & pestle) make a basic coriander pesto (blend coriander, extra virgin olive oil, salt, pine nuts and garlic)
Step 2. Pan fry Calamari in oil for couple of minutes
Step 3. Fold calamari through the pesto and garnish with red chilli


HINT: scored calamari is SO tender

STUFF IT



Delicious and HEALTHY Stuffed Mushrooms




Step 1. Remove stalk from mushroom
Step 2. Caramelise onion and bacon in oil and dash of honey and place on top of mushroom
Step.3. Add parsley and goats cheese and finish with a drizzle of oil and cracked pepper
Step 4. Bake 180 for 20mins until soft

Hint: Use Tuna instead of bacon

GREEKS DO IT BEST

GREEK SALAD


The key to this beautiful authentic Greek salad is using super-fresh ingredients and some love when assembling the ingredients.

Every one has made this salad. Nothing new but I like the presentation of this one...

Ingredients:

Fetta - One large piece of salty fetta
Oregano (fresh is best but dried is ok)
Kalamata  and green Olives
Roma or cherry tomatoes cut into wedges
Lebanese cucumbers halved
Red onion sliced



STEP 1. Chop and toss the ingredients together
STEP 2. Dress the salad and place fetta on top and drizzle with some extra Virgin oil

HINT:
Every day salad dressing
Dash of oil, lemon juice, white or apple cider vinegar dijon, honey and crushed garlic.

DUMPLING LOVE


COLD SNAP BEGS SOUP FOR THE SOUL


Dumpling Soup

Ingredients:
Pork mince
Garlic, Ginger, Chilli
Chicken Stock
Won ton wrappers
Rice noodles
Spring onion                                      





Step 1. Pour 1 litre of chicken stock and 1 cup of water into a saucepan. Add a knob of ginger & slowly bring to the boil. (If you have chinese five spice powder and star anise you could add a pinch to broth)
Step 2. In a separate saucepan cook rice noodle in boiling water and drain 
Step 3. In a bowl, mix mince, good dollop of garlic, ginger and chilli. Place teaspoon of mince mix into each wanton wrapper and fold into little delicious bundles. Press down edges with fingers or fork
Step 4. Place dumplings into boiling fragrant broth & cook for a few minutes. Remove ginger from broth. Place rice noodles into serving bowl, then dumplings and finish with a ladle of fragrant broth. Garnish with something green!! (spring onion or coriander).

HINT: # Add grated carrot to pork mince @ step 3
              #  You can use chicken mince instead of pork
